Sunken Apple Pie (gluten-free)

This apple pie variant is also possible without gluten

Gluten-free apple pie recipe

Ingredients for 1 springform pan 28 cm Ø (12 pieces):

125 g butter
125 g of sugar
1 packet of vanilla sugar
3 eggs
200 g light gluten-free flour
2 teaspoons of gluten-free baking powder
1/2 teaspoon cinnamon
1 teaspoon grated organic lemon peel
2-3 tbsp milk
750 g sour apples (e.g. Boskoop, Cox Orange)
2 tbsp lemon juice
2 tbsp almond flakes
1 tbsp powdered sugar


Preheat the oven to 175 degrees. Wash, peel and quarter the apples and remove the core. Score the apple quarter like a fan, drizzle with lemon juice.

Mix the butter, sugar and vanilla sugar until frothy. Stir in eggs one at a time. Mix the flour with baking powder, cinnamon, lemon zest and a pinch of salt, add to it. Mix everything with a little milk to form a smooth dough.

Pour the batter into a lightly greased springform pan. Spread the apple quarters on top. Sprinkle with flaked almonds.

Bake in the oven (center) for about 45 minutes. Let cool, sprinkle with powdered sugar.
