Spicy sea bream wrapped in paper

Crunchy enjoyment: homemade quick fish dish

Ingredients for 4 persons:

1 small zucchini
2 tbsp olive oil
salt
pepper
1 teaspoon thyme, rubbed
1/2 teaspoon mild curry powder
50 g walnuts
12 pitted olives
2 tbsp ajvar
4 large sea bream fillets (approx. 180 g each)
200 g cherry tomatoes
Also: 4 sheets of baking paper

Preparation:

Preheat the oven to 200 degrees (top / bottom heat). Wash, clean and slice the zucchini. Fry briefly in hot oil, season with salt, pepper, thyme and curry powder. Chop walnuts and coarsely puree to a paste with the fried zucchini slices, olives and ajvar.

Place each fish fillet on a large piece of baking paper and coat thickly with the seasoning paste. Wash tomatoes, cut in half lengthways and place on top. Fold the parchment paper so tightly around the fillet that no liquid can escape. Bake in the preheated oven for 20 to 25 minutes, depending on the thickness of the packet.

Tip: Place the parcels close together on the baking tray so that they do not unfold. So the fish remains protected.
