Zucchini spread

Green spread for a tasty start to the day

Ingredients (for 2 people):

300 g zucchini
salt
100 g onions
2 cloves of garlic
1 tbsp olive oil
1 bunch of parsley
3 tbsp salad cream (finished product)
1 tbsp lemon juice
Cayenne pepper
1/2 teaspoon red pepper

Preparation:

Wash and clean the zucchini, grate very finely and lightly salt, leave to rest for 5 minutes. Finely chop onions and garlic, sauté in hot oil until translucent. Add the zucchini and simmer over medium heat for about 10 to 15 minutes, stirring frequently, until all the liquid has evaporated.

Wash and finely chop the parsley. Let the zucchini mixture cool, mix with parsley. Stir in the salad cream. Season with lemon juice, cayenne pepper, salt and coarsely ground red pepper. Tastes great on whole grain bread.
