Zurich sliced meat with hash browns
Hearty strips of meat with crispy hash browns - let yourself be carried away in the culinary world of alpine cuisine

Ingredients for 4 persons):
2 red onions
500 g small mushrooms
400 g veal schnitzel
4 tbsp rapeseed oil
salt
pepper from the grinder
100 ml strong vegetable stock
100 ml cooking cream
800 g potatoes (mainly waxy variety)
2 tbsp flour
1-2 pinches of nutmeg
1 bunch of parsley
Preparation:
Peel and dice the onions. Clean the mushrooms. Cut the veal schnitzel into strips. Fry vigorously in 2 tablespoons of hot oil in a pan, season with salt and pepper, remove. Add almost half of the onion cubes and the mushrooms to the fat, stir-fry, pour in the stock and cooking cream, bring to the boil.
Add the meat and heat in the mushroom cream for 3 to 4 minutes. Peel and grate the potatoes, mix in the remaining diced onions (except for 2 tablespoons) and the flour. Season well with salt, pepper and nutmeg. Bake 8 hash browns in the remaining hot oil in a coated pan. Roughly chop the parsley, fold into the sliced meat with the remaining onion cubes and serve with the hash browns.
