Onion soup with garlic croutons

Vegetable soup with spicy breadcrumbs

Ingredients for 4 persons:

750 g vegetable onions
1 large carrot
3 teaspoons of rapeseed oil
1 l vegetable stock
4 lovage leaves
Salt, pepper, nutmeg, dried thyme
1 large clove of garlic
2 slices of white bread
100 g parmesan cheese

Preparation:

Peel the onions and carrots, chop them very finely, sauté in 2 teaspoons of hot oil and deglaze with the stock. Wash the lovage, chop finely, add to the soup with salt, pepper, a little nutmeg and thyme, cook for 20 minutes. Peel and chop garlic, sauté in 1 teaspoon oil in a non-stick pan over medium heat. Dice bread. Brown in the pan, turning constantly. Grate the parmesan. Spread onion soup on plates, sprinkle with parmesan and serve with garlic croutons.
